Whole Wheat Sweet Potato Bread

I saw a recipe for whole wheat sweet potato bread in a magazine and I thought it would be perfect to bake while we were putting up our Christmas decorations.  Derek and I both had Friday off of work and running so we were looking forward to relaxing and spending time with our kids. We all really liked this bread! Sweet potatoes are really high in vitamin A and the bread was made with whole wheat flour so as far as desserts go this is fairly healthy.  The good news is that the kids loved it!  It went together nicely with our peppermint gingerbread coffee!

Whole Wheat Sweet Potato Bread
1/2 cup butter, melted
1/2 sugar
1/2 brown sugar
2 eggs, lightly beaten
1 1/2 cups of sweet potatoes, mashed
2 cups whole-wheat flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. ginger
1 tsp. cinnamon
1/3 hot water

1. Heat the oven to 325 degrees and oil a 9- by 5-inch loaf pan.
2. In a large bowl, combine the butter and sugars.  Mix in the beaten eggs and mashed sweet potatoes and blend until smooth.
3. In a smaller bowl, combine the flour, salt, baking soda, and spices.  Add the dry ingredients to the sweet-potato mixture in two steps, alternating with the hot water.  Pour the batter into the prepared loaf pan and bake in the center of the oven for 60 minutes, or until a toothpick inserted into the center comes out clean.  Let cool completely in pan before removing.
